Macadamia Coconut Chocolate Tart

This tart is on my top 10 list, it’s so good!! I love ganache, add macadamia to it and I’m nuts about it…. pun intended ;)






Macadamia Coconut Chocolate Tart


For the crust

    • ½ cup/40g unsweetened shredded coconut
    • 1 ½ cups/190g almond flour
    • 2 Tablespoons/ 30g coconut oil
    • ¼ tsp salt
    • 2 Tablespoons/30 g Maple Syrup
For the Coconut Milk Ganache
    • 1 cup/ 240ml full fat coconut milk
    • 12 oz/280g bittersweet chocolate, finely chopped
    • 1 teaspoon vanilla extract
For the Topping
  • 1/2 cup/40g unsweetened coconut flakes
  • ½ cup/68g raw macadamia nuts, coarsely chopped
  • A pinch of sea salt



Make Tart Shell:
    1. Preheat oven to 350 degrees. In a food processor, pulse together almond flour, salt and shredded coconut until finely ground. Melt together coconut oil and maple syrup and add to almond flour and coconut mixture, pulse until coarse crumbs form (dough should clump together when squeezed with fingers).
    2. Transfer dough to a greased 9-inch tart pan with a removable bottom. Using a measuring cup or your fingers, evenly press dough in bottom and up sides of pan.
    3. Bake in center of oven until golden and firm, about 15- 20 minutes. Transfer to a wire rack to cool completely, at least 1 hour.
Make Topping:
    1. Spread the chopped macadamia nuts and shredded coconut evenly over a sheet pan and bake until lightly golden (about 3-5 minutes). Set aside.
Make Ganache:
    1. Place chopped chocolate in a large mixing bowl. In a small saucepan, bring coconut milk to a boil. Pour hot coconut milk over chocolate and let stand 1 minute, then stir until smooth and creamy. Mix in vanilla extract.
Assemble Tart:
  1. Pour chocolate into cooled tart shell. Lightly sprinkle toasted macadamia nuts and toasted coconut across the top. Sprinkle with a pinch of flaky sea salt if desired. Chill for at least one hour or until set and serve.

School starts next week, I’m not quite ready for that yet, Summer just barely started!! I enjoyed every minute of it.

Welcome Emmett Clayton Harper!

Born June 20th, 2014

8 lbs 8 oz. 21.5″ long.

No extras this time :) That’s the first thing we checked.


It’s a GOOD thing I was induced and didn’t wait to go on my own or I woulda had this baby on my front lawn! I usually go 2 weeks early, but I just wasn’t making much progress. I was feeling very discouraged though sympathy wasn’t coming from anywhere else, my doc said ‘ah I don’t feel so bad for you’. hahaha I felt like giving him a big noogie. ;)

20 minute labor once doc broke my water, 1 enormous push and Emmett was here!! No time for an epidural again, but really if I go fast I prefer to not have one because recovery is SO much better after!

Faith’s Frozen 7th Birthday party!!

Faithy bug is 7 now!! When I asked what kind of party she wanted, she went back and forth between so many things to do, then her last few decisions, I had to prompt her to do something a little more girly…. I had girls to be able to do girly stuff not boy stuff!! I don’t mind doing it, but several of her birthdays haven’t been as girly as I’d hoped, so I really pushed for something else besides TMNT, …. when I suggested Frozen, her eyes lit up and I knew we had hit a jackpot! I played up the theme with Elsa as much as possible with a few things from the other characters, but SHE was going to be the center of it because it’s GIRLY. :) Yay for success. haha

I love this movie just as much as Faith, ok probably not AS much, but it’s one of my favorites.


Birthday Girl! All she wanted for her birthday, besides clothes, was a Elsa dress up. I searched EVERYWHERE and they were all stinkin’ sold out!! I couldn’t believe it! I kept calling the Disney Store every week when they got their shipments in to see if they finally got some in- much to my dismay they kept telling me they didn’t know when it was going to arrive. I really was starting to fume smoke outta my ears; ridiculous that with a movie as popular as that, they should be stocked up to the wazoo with merchandise! Silly that I got so upset, but man…. unless I wanted to pay over $200 online, I wasn’t gonna get anything. I’m feeling the rage again as I type. hah ;)



Even though Faith was disappointed about no dress, I did happen to find an Elsa wand :/ better than nothing I guess…

I loved these giant Snowflakes! Made out of glitter card stock, they were super easy to make and added the perfect touch!



Because I could barely find anything, I printed and laminated my own characters and stood them up in half styrofoam balls, right along with the signs I made. Worked out great!!






I bought the standup of the girls online, then made the Olaf one myself.



I love that my chandelier went perfect with the theme! Some people asked if I got it for the party………… ummm.. I tried not to laugh :)

 The next day, on her actual birthday, we had a family party that was much less crazy! Such a fun party all weekend long!



Kitchen/Family Room Makeover!!!!!

I’m finally ready to show you my new and improved Kitchen/Family room!! I’ve been so excited to put this up, but it’s been a month by month process getting it all put together. I’m not completely done, but it’s decorated enough that I don’t wanna wait any longer to share! :)

Before, I had this beautiful chocolate brown, which was a great color, but after a while I just couldn’t take it anymore because of how dark it made the rooms feel. The sun doesn’t shine through this side of the house, so it made it feel darker than normal. I also found I didn’t love being in these rooms, and that’s a problem because it’s where I basically live during the days.


Here’s how we lived for the past 6 years… as Hubby and I sit here and look at these pictures, we can’t believe just how dark and bleak it looked! How I lived like that for so long is beyond me!



Yea, still had Christmas up- I couldn’t wait to start!



I got so eager to paint samples on the wall, then I realized I need Before pictures! Yup, orange….. are you nervous yet?! ;) Don’t be.



Next to the paint, I was itchin’ to rip down the valances.




OK…. are you ready now for a completely amazing bold and fresh transformation?!?





Sprucin’ up the walls while hiding the ugly thermostat at the same time! Double whammy :)

Very homey looking ya!?




The Orange pillow was my first piece of inspiration. When I found it I knew that was the color I was looking for and used that to match the other colors.


I LOVE the big clock, it takes up a lot of space, and adds a fun touch





The rug is another of my favorites, love how it covers most the carpet!



Entryway… I got rid of that ghetto unfinished wooden table that was there forever and had this beauty custom-built. I loved it so much I asked the lady if she did kitchen tables……


Indeed she did! I LOVE IT SO MUCH!!!! She did the bench with it, then I got the chairs online.

And THIS is our awesome, exciting, vibrant kitchen!! Don’t you love it?!?! Well, I do! I love the accented Tangerine walls and my chevron curtains!

I absolutely love being in these rooms now, makes me feel excited and more pumped to bake and do all the things :)




I love compact, dual-use things like this.


I was weary about making these myself, especially with it being sheer fabric, it was harder to deal with, but I just took it slow and I just about.. (ok i DID) do the happy dance when I saw the finished product! And the fact that the lines matched up with the other panel… wow, much impress ;)


You can’t leave out the folding chairs! We need extra chairs quite a bit and so why not have them match our fun room!



Fun printable that I put on top of coordinating scrapbook paper and framed! I did some of the usual food combos then added a few of mine and hubby’s favorites :) So fun!


I hate counter clutter. Well, clutter period, but especially when stuff is just hogging up all my counter space. So I searched around for a cute mail organizer to hang on the wall. It’s helpful, effective and cute!





THIS is our clock…. adorable ya?!?!! It’s not finished, I had a hard time finding 4×4 frames for a good price, so if anyone knows….. I’d love to hear! :)

I just love the pics of my sweet kiddies. The clock that I had here originally, I took the middle part out and used it! Perfect, so this is a very inexpensive clock. Not to mention, the cutest! :)



I am obsessed with chandeliers! I personally think every room should have it’s own chandelier :) I had a hard time finding the perfect one to replace our old one. I wasn’t going to, I was just going to repaint the one we had and cover the shades, but when my sister showed me this pretty…… I knew I just had to have it.


I’m in love. I like how it’s a longer one to shed more light evenly across the table, not to mention the way it sparkles in the sunlight. Yup, it’s love :)


Just be careful, if you’re an eager beaver like me and can’t wait for someone’s help to put it up (even though you’re prego and probably shouldn’t be climbing on chairs, and drilling holes not knowing what could happen)…… make sure you know where your water pipes are so it doesn’t come shooting out of the hole you just drilled too deep. And if water does come pouring out, don’t plug it up with a wad of gum. Luckily there was a nearby plumber who was able to come out right after to fix it, and my amazing daddo with his handyman skills patched it up after! So it was a quick fix, but would rather have skipped that extra step :) Still makes for a funny story, and instead of getting mad… you’ll be happy to know that I just laughed at myself and convinced hubby that it was a funny story and a laughing matter because “it could be a lot worse, like your prego wifey could’ve gotten electrocuted.” (insert puppy face) :)


 We love the barstools too! The other ones were a little too high and bulky. These are perfect for little Spence to maneuver around getting him what he wants atop the high places :)  (Note the snack jars to the far left are all empty.)





I hesitated to paint the space above my cabinets Tangerine, but I’m glad I did; with that, I don’t feel like I have to really decorate up there, it would just make it too busy.



Yes, even my Kitchenaid got a makeover! I’ve been wanting to do it for the longest time but couldn’t find more than a black or white epoxy spray paint. When I found this, I excitedly told hubby to which he acted with less enthusiasm then I had pictured I wanted him to ;) and said I don’t need to paint everything. That was a silly thought to me… of course you need to paint everything! I even woulda done the cabinets if I didn’t think that it would seriously cause a rift between us ;) hah Anyways, I love love the red pop in the corner of my kitchen.







It was a bunch of work and time, but I love how it all came together!! Thankfully I had lots of help, my awesome brother volunteered to come paint for me so I didn’t have to be around all those fumes. How thoughtful huh!! Hubby helped with the last part too, poor guys, it was more work than it looks because we had to do multiple coats of white on the previous brown walls, and the orange, and had to do ceilings too because they were the same color as the tan walls- such a pain, plus repainting the baseboards…. it all looks just like new now! Faith tells her friends, “Come look at our new house!” hahah

Strawberry Tart

As good as the salsa was… and it is very good, this tart is even better! Oh yummy nutty crust with smooth creamy cashew custard topped with my red juicy pretties :) I am a fan of crusts made with nuts rather than dough- they’re soooo much easier and quicker to make! Probably better for ya too.

And custard made from coconut butter and soaked cashews???? I don’t miss eating dairy or wheat when I can have this slice of heaven!



Strawberry Tart

{Recipe by My Whole Food Life}

For the Crust:

  • 1 1/2 cups raw almonds
  • 1/4 cup flax seeds
  • 10-12 medjool dates
  • 1/4 cup water
  • 1/2 tsp salt

For the Strawberry Topping:

  • 4 cups sliced strawberries
  • 2 T coconut sugar
  • 1 tsp lemon zest

For the Custard:

  • 1 cup cashews (soaked overnight)
  • 1/4 cup Coconut Butter
  • 2 T maple syrup
  • 3 T milk (I used almond milk)

  1. In a large bowl, add the strawberries, sugar and lemon zest. Place in the fridge for about 3 hours.
  2. For the tart
  3. In the food processor, combine the almonds, salt and flax seed into a course powder.
  4. Add in the dates and the water and pulse until a dough starts to form.
  5. Once the dough is formed, gently form it into a greased tart pan. Wet hands work best for this.
  6. Once the crust is laid out in the tart pan, place in the fridge for 20 minutes to firm up.
  7. For the custard
  8. While the crust is firming up, make your cashew cream.
  9. Drain the cashews that have been soaking overnight and add them to a blender with the coconut butter, maple syrup and milk.
  10. Blend until a thick custard-like cream forms.
  11. Remove it from the blender and spread it out over the crust.
  12. With a slotted spoon, spoon the strawberry mixture on top of the custard leaving only the liquid left over in the bowl.


Strawberry Mango Salsa

Our home has been filled with the sweet aroma of strawberries this week; such a fresh smell making me even more eager for warm weather! We got teased with a few days of perfect weather only to get the coldness back :( I’m just glad it’s not snow, rain is fine.


24 lbs of strawberries right here- plus I did 6 more crates for my mum and sis. They’re easier to do than peaches, no peeling! These are the most red, juicy, sweet strawberries I’ve had in a while… and HUGE, you’d think they’re from Costco, but they’re not :)



Lots to do with these sweets- freezing a bunch for smoothies, drying some for fruit roll ups, eating some fresh, Pancakes with fresh strawberry sauce, and a few more things…. this week has been filled with some ‘berry’ yummy stuff! :)

This salsa was no exception, I love the combination of sweet strawberries, tangy mangoes and a kick of jalapeño topped off with fresh cilantro and a spritz of lime. Uhhh yea, it’s good. So go make some. Now. ;)

Strawberry Mango Salsa

{Recipe by: Damn Delicious}


  • 3/4 cup diced strawberries
  • 3/4 cup diced mango
  • 1 jalapeño, seeded and minced
  • 2 tablespoons diced red onion
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 teaspoons honey, or more to taste
  • Juice of 1 lime


  1. In a large bowl, combine strawberries, mango, jalapeño, onion, cilantro, honey and lime juice.
  2. Serve immediately.

Over a month later and I’m finally getting this boy up to date :) Really, the reason I didn’t do it earlier is because I couldn’t stinkin’ get some good pictures of him! Spencer’s Abominable Snowman 2nd Birthday Party!!


My sweet little boy is officially a toddler! It’s a busy, crazy stage especially for little boys, as I’ve been finding out, but it’s so much fun too! He is always providing entertainment for us :)

I was thinking of a monster party for the little dude, but I thought maybe a snowman party since it’s winter…… that’s when I put the two together… monster, snowman…. Abominable Snowman!!!! It’s perfect! :) All the possibilities came flowing, specifically yellow (lemon) snow cones! hehe I had so much fun with this theme! Spencer especially liked all the sugar… but wouldn’t eat his own cake! sad :)

Color Scheme: Light blue, yellow and white. I wanted to create a snowy look from the Himalayas where the Abominable Snowman lives with pops of yellow and icy blue.


Each snow cone has some party info- “You are being banished to the Himalayas with our little Abominable Snowman who’s turning 2!”

I got the cutest Abominable Snowman hat on Etsy! Spence however did not share in my enthusiasm. The fur kept getting in his mouth and would not smile- this was the best I could get :)

Two sets of cards, one for each team. First one to find all 10 wins!




“Don’t tamper with the mail”.

Yeti, the Abominable Snowman used to work in a mail room and was banished to the Himalayas when he got caught tampering with some mail. So with this game, I just had a package of prizes that one kid had behind their back and was “tampering” with it while one person tried guessing who it was. If they were caught, they were “banished to the himalayas” and became the guesser. If they didn’t get caught and were the last one picked, they got to open the bag of prizes. I totally just made this up on a whim and they LOVED it!!



“Monster world, Human world”.

Same rules as “Red light green light” game. When you turn your back, you say “Monster”, and when you turn towards us you say “Human”- don’t let the human see you move :)



Daddy and son matchy matchy. hah didn’t even realize it til they sat down to open gifts.



Spence got some great practice unwrapping for his birthday on Christmas Eve, then on Christmas morning.

Cinnamon Roasted Almonds

For our neighbor gifts this year I made up a few batches of Cinnamon roasted Almonds! I LOVE those things, and had I known they were so easy and quick to make I woulda made them a long time ago. It’s probably a good thing I didn’t though :)

Printed out our Christmas card, made up a tag to go with it, stuff in a cute box and wrap with twine!


mmmmm yummy crunchy, sugary goodness! It’s a dang good thing I handed these out, cuz these are an addiction of mine ;)




Cinnamon Roasted Almonds

{Recipe by Something Swanky}

3 cups whole almonds, raw
1 cup sugar
1/2 tbsp. cinnamon
1/4 cup water

In a large skillet or pot combine the sugar, cinnamon and water over medium-high heat until the sugar has dissolved.
Add the almonds and stir constantly with a spoon or spatula, coating the almonds with the syrupy mixture.
Keep stirring until the sugar crystallizes (this takes about 8-10 minutes) and it looks sandy. Don’t stop stirring!
Remove the pan from heat and scoop the almonds onto wax or parchment paper.
Let the cinnamon almonds cool for a few minutes before serving.
