Supa’ yummy Homemade Salsa

My love for salsa started clear back when I was about Faithy’s age. Sitting next to my dad, munching on chips and salsa while watching Tales of the Crypt or X-Files. hah That didn’t last that long, but my love for salsa did.

There’s some great salsas out there and my mom’s is one of them! It’s hard to go back to store bought when all the jars of hers are all licked clean.

I didn’t end up canning some but made some fresh and wow it made a TON! It’s a large batch recipe, so I gave some to neighbors. These tomatoes I bought from a local farm were SO delish! I love just eating fresh, red, juicy tomatoes with salt on it too.

 

Large Batch Salsa

5 gallons Tomatoes, chopped

5 Red Onions, chopped fine

5 White Onions, chopped fine

7 bunches Green Onions, chopped

1 T Oregano

5 Serrano Peppers, chopped fine

10 JalapeƱos, remove seeds and chop fine

1 bunch Cilantro, chopped fine

3 oz. fresh Garlic, minced

3/4 cup Salt

4 tsp. Cumin

6 small cans Tomato Paste

1/4 cup Sugar

You can add more or less of whatever, depending on the taste you’re going for. For mine, I don’t like spicy, just a little kick, so I only put in 2 red and 2 white onions, 3 serrano, 2 jalapeno, a lil more cumin and salt, no tomato paste, teensy bit of sugar, and added a bit of lime. SO TASTY!!! I’m in salsa heaven! :)

If you still have some fresh garden tomatoes sitting around, go make some, you won’t be sorry! It’s kinda time consuming but really easy once everything is chopped up, just throw it all together, mix and munch munch munch! :)
