Healthy Fruit pizza

Saturdays have always been the exciting day for breakfast. Something new, fun and yummy besides the same ol’ whatever we eat during the week- green smoothies or oatmeal. Growing up, I used to eat a LOT of oatmeal, cream of wheat, and other healthy grain cereals. It was like Christmas morning and a rare time when my mom would buy sugar cereal. I loved me a good bowl of fruit loops or cocoa puffs.

Instead of sugar cereals, I like to try one of our favorites (like german pancakes) or something new. Now, fruit pizza isn’t new to me, we’ve been friends for a long time. This is however, a healthier version of fruit pizza. I just used gluten-free flour for Tim to make it safe for him. He was very pleasantly surprised to wake up to his own plate of gluten-free fruit pizza!

I threw some chocolate chips into mine and Faith’s because everything is better with chocolate. That was silly of me to explain, everybody knows that! ;)


Healthy Breakfast Pizza

{Recipe from Chocolate-Covered Katie}

  • 1/2 cup whole-wheat pastry flour
  • 1 tsp baking powder
  • 2 stevia packets (1/16 tsp uncut) or 2 tablespoons sugar {I used honey}
  • very scant 1/2 cup water, juice, or milk of choice {I used rice milk}
  • 2 tbsp applesauce or coconut oil (or pumpkin, veg oil, mashed banana, or even baby food!)
  • 1/8 tsp salt
  • spices or extracts if you wish (I like adding a little cinnamon)
  • A few handfuls ______ Fill in the blank! Raspberries? Chocolate chips? Chopped apples, walnuts, and raisins? Anything goes!


Mix everything together and pour into a greased pan. Cook in an UNpreheated oven at 420 degrees F for 10 minutes, or until a toothpick comes out clean. Then you get to play with toppings!!

For cream cheese spread I used ‘Tofutti- Better than Cream Cheese’ sweetened with honey and vanilla. Mmmmmm Faith and I split one, it was sure filling but I easily could’ve eaten a whole one by myself :)
