I screeeeeam for Ice cream

We’ve been having a lot of ice cream around here this summer. Got an ice cream maker from Costco a few months ago and it, along with our BlendTec, has been getting a lot of use.

Though it’s not news to most, I don’t think I mentioned on here yet that we figured out what was wrong with my hubby! For almost a year he’s been suffering with all sorts of health problems, and around October the asthma and breathing problems escalated. It was getting pretty scary. That’s the last thing I need…. again. Thank goodness after many much tests and doctors he found out he has Celiac Sprue disease. That’s gluten intolerance. Sooooo our diets have changed once again around here. But not by much, we had started shaping up our diets before then so it made the transition for him a little bit easier. Except when it comes to desserts. Poor guy sees all these yummy treats I make that he can’t have so I’ve started doing a lot of searching for some tasty, healthy, gluten-free desserts.

That brings me to this ice cream. Instead of cream, it uses Coconut Milk. Much better for you and I actually like it better than regular ice cream, I don’t feel blah after eating it. We start with this base vanilla recipe:

1 can full fat Coconut Milk (I like Thai Kitchen best)

2 teaspoons vanilla

1/3 cup honey

That’s it! It’s yummy plain just like that or you can add whatever you want in it!

We’ve tried a bunch of different things. I’ve only taken pictures of 2, I’ll definitely get the other ones up later cuz they’re SO good!

Strawberry Banana Ice Cream

1 pint strawberries

1 banana

Blend in food processor with coconut milk, honey and vanilla.

Pour into ice cream maker and 15 minutes later you have pure edible bliss! :)

Watermelon Lime Ice Cream

{Recipe from Family Fresh Cooking}

Two (13.5 ounce) cans full fat Coconut Milk
1 tablespoon fresh Lime Juice juice (about 1 Lime)
8 ounces fresh Watermelon, remove any seeds, cut into chunky pieces
1/2 t. honey, adjust according to taste
3 ounces Mini Chocolate Chips
When I was halfway done eating a bowl of this deliciousness I realized I forgot the chocolate chips! Most important part! :) Must add those, and they must be the mini ones ;)
We are all about watermelon around here! It is one of the many things that reminds us of our Mikkie. She LOVED to eat watermelon (would even eat the rind) so it makes us happy when we eat all things watermelon. :) Watermelon “gom” (gum) is double happiness, 2 of her very favorites combined into one.
