I didn’t use to like sweet potatoes, I avoided them at all cost during Thanksgiving dinners. It wasn’t until we did a cleanse 2 years back, when hardly anything was “safe” to eat, that I discovered what I’ve been missing out on all these years!
I saw someone make some of these with regular potatoes but my thoughts went straight to sweet potatoes! They are yummy!!! So fast and easy! I chopped them up, threw ‘em on the grill, drizzled olive oil over tops and sprinkled with salt and peppa’. In about 7ish minutes they were ready to be hoovered. mmmmm My new favorite way to eat these. :) Somehow things taste better with grill marks on them…. am I the only one who thinks that? ;)
