Banana Pancakes

Ever hear Jack Johnson’s song, Banana Pancakes? Tim introduced me to his music back when we were dating; I was hooked. One of my favorites of his is “Good People”.

Banana Pancakes, however, is Spencer’s favorite. He will be crying, then as Tim rocks him in his arms and sings this song, he almost instantly quiets down and smiles at his daddy. Precious moment. Faithy has come to love the song also and has been requesting that as a bedtime song, though I don’t know the words like Tim does so I leave that as ‘his thing’ with the kids. :)

The other day Faithy started singing it and I asked her if she’s ever had banana pancakes, to which she replied, “No. We should make some…” I quickly agreed that the next morning she should help me make some. I found a yummy and super easy recipe…we’re talking like 4, 5 minutes tops to make here. Like I said, easy. I am not a pancake fan, I prefer french toast, but these were good!

Banana Pancakes

{Recipe from Chocolate Covered Katie}

1/3 cup flour {I used Spelt flour}

1/2 tsp baking powder

1/2 tsp pure vanilla extract

1/2 mashed banana

1/4 cup nondairy milk {I used unsweetened Almond Milk}

dash salt


Mix the dry ingredients together. In a separate bowl, mash the banana and then add the other liquid ingredients. Stir the dry into the wet. Then make yur pan-a-cakes! (Makes 4-5)

I drizzled ours with Pure Maple Syrup. Yum.
